“Empanada of Ilocos”

Kasama sa mga nasa listahan namin na dapat matikman ay ang famous empanada ng ilocos. Ang tagal kong naghahanap ng empanada doon dahil ang nasa isip ko na empanada ay yung maliliit na dough ang balot at meat ang nasa loob, usually ay sa mga bakeries makikita. Two days na kami sa Ilocos hindi ko pa rin makita ang sinasabi nilang empanada. Napilitan na akong magtanong sa isang tindahan doon kung saan makakabili ng empanada. Ito pala yun……

Ang dami palang gumagawa at nagluluto ng empanada sa Vigan. Nasa isang lugar lang sila sa may kabayanan, tabi-tabi ang mga maliliit na tindahan na may mga tables para sa mga gustong doon kumain, tiis lang sa init dahil katabi mo ang mga naglalakihang kawali na may kumukulong mantika..hehehe.

Na curious din ako kung paano sila niluluto kaya pinanood ko muna. Gawa na yung kanilang dough na nakahati nasa maliliit na bilog, ginagamitan na lang ng rolling pin para lumapad, then lalagyan ng vegetables (parang gulay sa paggawa ng okoy) sa half part ng bilog pero may space na konti sa gitna ng vegetables para doon ilalagay yung sariwang itlog. Yolk lang ang nilalagay sa empanada.

Nakita ko yung eggwhite na nilalagay sa isang malaking lalagyan, akala ko tapon na yun. Inihahalo pala nila yun sa gulay na may hipon (shrimps) at ginagawa namang okoy. Wala nga namang sayang dahil nagagamit lahat.

Alam nyo bang binalikan pa naman ulit sa Vigan ang empanada after namin sa Laoag City para magbaon papuntang Baguio. Nagustuhan kasi ng mga bata dahil masarap nga naman at kakaiba.

Breakfast of the Day

Sa loob ng halos 2 weeks na nasa road trip kami ay ganito ang breakfast namin everyday. Tapsilog, Longsilog, Hotsilog Tocilog at kung anu-ano pang may log…hehehe. Kahit saang hotel kami ma check-in ay ganito ang breakfast sa menu nila. Sarap na sarap naman kaming lahat dahil kumpara sa nakasanayan na almusal ng mga bata dito na cereals,milk, ham and cheese ay kakaiba para sa kanila ang pagkain natin sa pinas. Dagdag pa ang boneless na daing na bangus.

Dito kasi dahil sa kabisihan sa umaga mas mabilis kapag binuhusan mo ng gatas ang cereal, instant almusal na. Kapag pinainit mo sa microwave ang ham or bacon, pwede ng ilagay sa bread at lagyan ng cheese instant sandwich na.

Congo Rice

Kumain kami ni kd sa Congo Grill noong nasa Pinas kami. Wala naman kasi ditong branch ang Congo kaya hindi kami familar sa menu nila. Na curious lang ako sa napakaitim na rice na order sa kabilang table kaya sabi ni kd ay subukan namin. Para kasing sarap-na sarap yung mga kumakain sa kabila.

Ito pala yung congo rice nila, kung hindi ko nakita yung mga calamares na toppings sa rice ay hindi ko maiisip na yung black ink pala ng pusit ang ginamit para pang kulay sa rice. Masarap naman sya kaya lang problema dapat after mo kumain ay mag toothbrush ka…hehehe. Wala naman kaming dala dahil namasyal lang kami sa mall. Kahit mag gargle ka pa talagang mangingitim yung ngipin mo.

BREAKFAST

Tortang Talong (eggplant w/ minced chicken)

LUNCH

Mustard lemon chicken w/ sauteed vegetables (cabbage, brocolli, zucchini and brussels sprouts)

Mustard Lemon Chicken Breast (recipe)

2 Tbsp. mustard
2 Tbsp. balsamic vinegar
3 Tbsp. lemon juice
2 cloves garlic, minced
1 tsp. paprika
4 6 oz. chicken breasts (boneless/skinless)

Mix first 5 ingredients.
Add chicken breast and let marinate for at least 1/2 hour in the refrigerator.
Cook on preheated grill or grilling machine until done

DINNER

Fish w/ vegetable salad

 

4 pcs fish fillet

unsalted butter

6 garlic cloves

1 tbsp fresh parsley leaves, roughly chopped

2 preserved lemons, pith removed and rind finely sliced
(or 1 tsp of rind from a fresh lemon)

1 red onion, peeled, halved and thinly sliced

1 tbsp olive oil, plus a little extra for the pan/hot plate

1 tbsp sea salt

1 tbsp cracked black pepper

tomatoes, roughly chopped

Medyo matrabaho yung instruction ng fried fish fillet. Nakita nga ako ni tin2 na nagluluto at tawa sya nang tawa. bakit daw ganito:

Sa frying pan ay nakapatong ang foil na may butter at dun piprituhin yung isda. Bakit daw pahihirapan pa eh pwede namang deretso na sa kawali. Naisip ko nga rin yun, bakit nga naman may foil pa eh ang hirap kayang baligtarin. Kaya direct na sa pan yung mga sumunod.

Masarap ang resulta ng recipe pero medyo matrabaho. Kaya wag nyo na syang subukan…hehehe.

Steamed fish and green beans w/ light mayonnaise

Vegetable Salad

(Tuna in water (drained), cherry tomatoes, olives, cucumber, lettuce and low fat cheese)

 

 

Stuffed Chicken Breast

8-10 chopped Olives
2 minced cloves garlic
1/2 pack frozen spinach, thawed
2-3 tablespoons Low Fat Feta Cheese
2 tablespoons of olive oil
Salt & Pepper
2 large chicken breasts Mix together first 5 ingredients. Slice a deep pocket into the chicken breast to fit stuffing. Fill stuffing into chicken and lightly brush chicken with olive oil and salt and pepper. Bake for about 15-20 minutes, or until done.

HAM n’ EGG

2 large eggs
2 or 3 thin pieces of deli sliced ham
sharp cheddar cheese (low-fat) shredded
Fry the 2 eggs closely together so they will be one large piece…when frying, bust the yokes and let them spread across parts of the white.
Right when they are almost done, top with the ham, then the cheese
Sprinkle with salt and pepper and it is YUMMY!

Sauteed bean sprout w/ tofu and fried lapu-lapu fillet

Beef w/ cheezy cheese and vegetable salad

 

Ingredients:

1 pound ground beef
1 small onion, chopped
1 clove minced garlic
1 1/2 cups diced tomatoes, undrained
1 1/4 cups water
1 tablespoon dried parsley flakes
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1 teaspoon salt
1 cup cottage cheese
1/4 cup grated parmesan cheese
Dash basil, pepper, optional
Shredded cheese, if desired

In large skillet, brown beef with onions and garlic; drain. Add tomatoes, water, parsley, basil, oregano, and salt. Mix well. Bring to a boil, stirring occasionally. Reduce heat, cover, simmer for 20 minutes . Combine cottage and Parmesan cheese. Sprinkle in basil and pepper to taste if desired. Cover and cook for 5 minutes. Sprinkle with shredded cheese, if desired.

A cheap travel insurance is good as it saves you quite a deal on travel, even though the vacation deals may be cheap enough. If it is a cruise, it helps ever more. Going for arrangements like car rental are other money saving tactics.

It’s already day 3. I decided to alternate the breakfast with fish and beef tapa. I also like to use tocino but the price of sugar substitute is 5 times the price of regular sugar.

If you want cheap travel, you will have to make more effort than looking for vacation packages. There will be a lot of vacation browsing. Try getting reservations at cheap hotels.

Laptop Computers

I bought a laptop few months ago. Buying an important item or rather an expensive appliance needed a good decision and advice from the experts. I had to ask my hubby’s opinion on what brand I am going to buy, is it Apple? Toshiba? Dell? or HP? If only not with our scheduled trip back home I won’t be having second thought in buying the best laptop I have in mind.


We decided to buy Toshiba laptop at the end. Aside from its good internet wi-fi feature the price is also affordable. With its wireless network connection , I am not limited to stay in one place of the house when chatting with friends.

Dental Plans

I already have DentalPlans for my family. I can say I am really satisfied with the discount dental plans offered. Regular dental visit now becomes habitual for my family. We really enjoy the benefits of having discounted dental service. With the high prices of commodities now a days, a discount big or small really counts.

When my officemate asked me about the benefits of DentalPlans I told her without hesitation the satisfying discount I got from my DentalPlans. And I will continue to recommend it as long as there are people looking for the best plan.

I found this vegetable recipe at Connie’s food blog last year. I remember it was Lenten season and I’m looking for some vegetarian food as part of our fasting. I saw this tofu and vegetable recipe and tried it at home. My husband and kids just loved it.So I included it on my menu for catering business. This is best for Lenten because it’s a non-meat recipe.

Storing Food

About Honey:
To substitute honey for sugar in recipes, start by substituting
up to half of the sugar called for. With a little experimentation,
honey can replace all the sugar in some recipes.

When baking with honey, remember the following:
Reduce any liquid called for by 1/4 cup for each cup of honey used.
Add l/2 teaspoon baking soda for each cup of honey used.
Reduce oven temperature by 25 F to prevent over-browning.

Because of its high fructose content, honey has a higher
sweetening power than sugar. This means you can use less honey
than sugar to achieve the desired sweetness.

When measuring honey, coat the measuring cup with non-stick
cooking spray or vegetable oil before adding the honey.
The honey will slide right out.

To retain honey’s wonderfully luxuriant texture, always store
it at room temperature; never in the refrigerator. If your honey
becomes cloudy, don’t worry. It’s just crystallization, a natural
process. Place your honey jar in warm water until the crystals
disappear. If you’re in a hurry, place it in a microwave-safe
container and heat it in the microwave on HIGH for 2-3 minutes,
stirring every 30 seconds. Remember, never boil or scorch honey.

Storing Cheese:
Store cheese in your refrigerator, which approximates the
temperature of aging rooms. Keep it wrapped tightly in plastic,
away from air. Air helps mold grow on cheese. If you get a little
mold on the outside, just cut it off. The English say if mold
won’t eat your cheddar it can’t taste very good.
Bring cheese to room temperature before melting. Melt cheese
over a low heat to help prevent toughening and separation of
oils and liquids.
Most ripened or aged cheese is low in moisture content and
can be frozen without drastic flavor and texture changes. Thaw
slowly in the refrigerator for 24 hours or more. If frozen for
several months, the cheese may dry out somewhat and become
crumbly when thawed.

Salmon for South Beach Diet

Try this mouth watering grilled salmon recipe of south beach diet with the combination of fresh vegetables for lunch or dinner.

A combination of freshly cut lettuce, cucumber, beans, tomatoes, olives and low fat ranch dressing.

This salad combination includes iceberg lettuce, cucumber, steamed zucchini, steamed green beans, tomatoes and grilled chicken meat.

My husband prefers his meal with low fat fetta cheese mix with fresh salad.

Getting Creative With Salads

Tired of eating the same salad, day after day? You can cure the salad blues by experimenting with new and exciting ingredients. Here, approved for all Phases, are a few alternatives to typical salad fixings:

  • Try a darker, more nutrient-dense green (such as baby spinach, arugula, or a spring mix) over your usual iceberg lettuce.
  • Opt for squash, eggplant, artichoke, and zucchini grilled with a touch of extra-virgin olive oil, instead of (or in addition to) more traditional ingredients, like tomatoes and cucumbers.
  • Try avocado or olives for a touch of heart-healthy monounsaturated fat.
  • Toss in grilled chicken, salmon, tuna, shrimp, or even tofu, for some satisfying lean protein.
  • Top with pecans, sunflower seeds, or another more exotic nut, instead of white-bread, buttery croutons.
  • Make your own salad dressing with an extra-virgin olive oil, mustard, balsamic vinegar, and garlic. Store-bought dressings are fine, too, as long as they don’t contain more than 3 grams of sugar per 2-tablespoon serving.

 My three kids are very much attentive when talking about new gadgets in games technology. They have almost every new game console launched in the market. Their latest is the new Playstation3. Everyone was excited when I bought them this new toy. During their Playstation2 time I always hear their small discussion about who pulled the controller cord? When my youngest passed by in front of their plastation2 while the other 2 siblings were playing, you will surely hear the other sibling shouting because the cord was disconnected from the Playstation. With the new playstation3 wireless controller, those petty quarrels eliminated. I dont hear them shouting anymore.Aside from playing games, watching movie is one of their favorite pastime.  I didnt know that this new game technology can download a movie trailer.
